Mock Oatmeal

This grain free breakfast is a satisfying, filling healthy breakfast that is a great alternative to eggs.  Prep the toppings the night before and soak the seeds while you shower for an near instant morning meal.

3 tbsp chia seed (whole or ground)
2 tbsp flax seed meal 
¼ cup finely chopped nuts
1- 2 tsp maple syrup, stevia or xylitol
1/3 cup hot water or almond milk
1 tsp coconut oil or 2 Tsp (canned) coconut milk 
1 tbsp almond (or any nut) butter 
¼ cup + apples, berries, bananas (organic and in season)

 In a small bowl, combine chia and flax seed meal, add hot almond milk and (optional) maple syrup. Cover and let stand at least 10 minutes.  Add desired toppings and enjoy.
